In the lead-up to the previous edition of the Gourmet Traveller Australian Restaurant Guide and the announcement of our Restaurant of the Year, we sat down with the chefs who were awarded three stars in the 2008 edition of the guide to talk to them about what it is that they do, and why they do it.
