Pomegranate and White Wine Sangria

A refreshing carafe cocktail, easy to make and serve as a gorgeous aperitif at your next summer do.

Ingredients

  • 50 ml lemon juice (about 1½ lemons)
  • 200 ml pomegranate juice
  • 250 ml of a medium bodied white wine (a good local semillon, pinot gris or sauvignon blanc are all great for this)
  • 60 ml white rum
  • 50 ml sugar syrup
  • 10-15 mint leaves
  • To serve: ½ lemon, cut into wedges and ¼ cup fresh pomegranate seeds (optional)

    Add the lemon and pomegranate juices, white wine, white rum and sugar syrup into the 1 litre size carafe with the mint leaves and pieces of fruit. Mix and top with ice just as guests arrive. Pour into wine glasses and enjoy!

Notes

Note To double the quantity and serve 12, place into 1.5 litre carafe without ice, refrigerate for an hour & serve into wine glasses half filled with ice.
