AT A GLANCE
This wonderfully simple dish is inspired by one of Fuchsia Dunlop's recipes. The key is in the temperature of the oil - for best results the oil should scorch the lettuce as it hits the pan. Wash the lettuce well to remove any bugs and dry the leaves thoroughly so you don't end up with a watery sauce.
|01||Heat oil in a wok over high heat until smoking, then add garlic and stir-fry until fragrant (20-30 seconds). Add lettuce, toss, then cover for 1 minute. Remove lid, toss lettuce again to combine and cover again until wilted (2 minutes). Add sauces, season with white pepper, toss to combine and serve.|
