Spiced brown sugar butter


  • Serves 6 people

  • 250 gm soft unsalted cultured butter, coarsely chopped
  • 110 gm (½ cup firmly packed) brown sugar
  • 1 tsp mixed spice
  • 1 tbsp Marsala (or to taste)
  • 2 tbsp thinly sliced glacé ginger
01   Using an electric mixer, beat butter, sugar and spice for 10 minutes or until pale and fluffy, then gradually add Marsala 1 tsp at a time, beating well after each addition (if added too quickly the mixture may split). Add ginger, whisk to combine, cover with plastic wrap and refrigerate until needed.
