Watermelon, olive and feta salad


  • Serves 4 people

Add some grilled prawns and crusty bread to make this salad more of a meal.

  • 500 gm watermelon, cut into 2cm pieces
  • 60 gm feta
  • 80 gm Kalamata olives
  • ½ Spanish onion, thinly sliced into rings
  • ¼ cup coarsely chopped dill
  • Red wine vinaigrette
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp pomegranate molasses
01   For red wine vinaigrette, shake ingredients in a jar with a screw-top lid until well combined. Season to taste and shake again.
02   Combine remaining ingredients in a large bowl, drizzle dressing over, stir to coat and serve.
