Mango daiquiri

AT A GLANCE

  • Serves 4 people

  • ½ cup sugar syrup
  • 24 ice cubes
  • 150 ml Havana Club white rum
  • 100 ml lime juice, plus extra lime wedges, optional, to serve
  • 2 cups chopped mango flesh (about 1 large mango)
01   Process all ingredients except sugar syrup in a blender until smooth, then add sugar syrup and process until combined. Taste daiquiri, adjust sweetness, if necessary, with a little more sugar syrup, then divide immediately among 4 chilled glasses and serve with extra lime wedges, if using.
