  • 1 cos lettuce, large leaves separated and each cut widthways into 3 pieces
  • 4 radishes, thinly sliced on a mandolin
  • 2 tbsp finely chopped chives
  • 1 tbsp finely chopped anchovy fillets (about 6)
  • 60 ml (¼ cup) extra-virgin olive oil
  • Juice of 1 lemon
  • 4 focaccia rolls, halved
  • 160 gm whole-egg mayonnaise
01   Combine lettuce with radish, chives, anchovies, olive oil and lemon juice in a bowl, toss to combine and season to taste.
02   Spread focaccia bases and tops with mayonnaise, pile cos mixture onto bases, then sandwich with tops and serve.

Note This sandwich recipe from New York sandwich bar Saltie is a winner in its delicious simplicity. At Saltie the kitchen makes its own focaccia and mayonnaise, but we've substituted store-bought to save time.
