• Serves 6 people

  • 1 kg floury potatoes, such as King Edward, cut into 4cm pieces
  • 150 gm kale, coarsely chopped
  • 200 ml milk
  • 100 gm butter, coarsely chopped, plus extra melted butter, to serve
  • 2 spring onions, thinly sliced, plus extra to serve
01   Combine potato and a generous amount of salted water in a large saucepan, bring to the boil and cook over medium-high heat until tender (30-35 minutes). Drain and set aside in colander to steam (2-3 minutes). Return to saucepan and coarsely mash.
02   Meanwhile, cook kale in boiling salted water until tender (1-2 minutes). Drain and set aside.
03   Heat milk and butter in a small saucepan over medium heat until hot (2-3 minutes). Add to potato mixture a little at a time, stirring to combine (you may need a little more milk). Stir though kale and onion, season to taste, drizzle with melted butter, scatter with extra spring onion and serve hot.
