Insalata Caprese


  • Serves 6 people

  • 1 kg heirloom or perfectly ripe tomatoes
  • 2 buffalo mozzarella (about 250gm each), thickly sliced
  • ½ cup (loosely packed) basil, coarsely torn
  • For drizzling: extra-virgin olive oil, for drizzling
  • To serve: crusty bread (optional)
01   Arrange tomato and mozzarella on a serving platter, scatter over basil, drizzle with olive oil, season to taste, and serve with crusty bread if desired.
