This has been adapted from a recipe by Jeffrey Morgenthaler of Clyde Common in the States.

  • 1 tsp demerara sugar syrup (see note)
  • 30 ml gin
  • 30 ml Amontillado Sherry
  • 1 tbsp freshly squeezed lime juice
  • To top: ginger beer
  • To garnish: lime wedge
01   Shake all the ingredients, except the ginger beer, with ice, then strain into a goblet or highball glass. Fill with ice, top with ginger beer and garnish with a lime wedge.
Note To make demerara sugar syrup, combine two parts demerara sugar to one part boiling water, stirring until the sugar is dissolved.
