Patate al forno

AT A GLANCE

  • Serves 6 people

  • 1 kg desiree potatoes, scrubbed and cut into thick wedges
  • ¼ cup each of (loosely packed) rosemary and sage leaves
  • 60 ml (¼ cup) olive oil
01   Preheat oven to 200C. Combine all ingredients in a roasting pan, season to taste with sea salt and freshly ground black pepper. Roast until golden (30-40 minutes). Serve with rotolo di coniglio.
