Peach and nectarine salad

AT A GLANCE

  • Serves 6 people

  • 3 each of yellow nectarines and white peaches, cut into wedges, stones removed
  • 2 tbsp caster sugar
  • 1 tbsp Cognac
  • 1 tbsp mint leaves, thinly sliced, plus extra to garnish
01   Combine ingredients in a bowl, cover with plastic wrap and stand for 1 hour to macerate.
02   Transfer salad to a serving bowl, scatter with extra mint and serve with Christmas pudding ice-cream.
