1.Muddle all ingredients except rum to a bar glass or shaker.
2.Add rum and ice cubes to shaker, shake hard and fast, then strain into a coupe or martini glass. Float a sprig of thyme to garnish and serve.
For honey and thyme water, dissolve honey in an equal amount of hot water. Add a few sprigs of thyme and steep overnight to allow the thyme flavour to infuse.
