Honey and Thyme Daiquiri

AT A GLANCE

  • Serves 1 people

  • 15 ml lime juice
  • 10 ml honey and thyme water (see note)
  • ½ fresh fig
  • 60 ml (¼ cup) rum (see note above)
  • To garnish: sprig of thyme
01   Muddle all ingredients except rum to a bar glass or shaker.
02   Add rum and ice cubes to shaker, shake hard and fast, then strain into a coupe or martini glass. Float a sprig of thyme to garnish and serve.
Note For honey and thyme water, dissolve honey in an equal amount of hot water. Add a few sprigs of thyme and steep overnight to allow the thyme flavour to infuse.
